Named after the legendary home of the North American International Auto Show, The Cobo Crunch is a tribute to Detroit’s ability to showcase the future while respecting the classics. Just as Cobo Hall (now Huntington Place) stands as a glass-and-steel landmark where the Lodge Freeway meets the river, this cookie is a structural masterpiece of texture and light. We didn’t just bake a cinnamon cookie; we engineered a 'chassis' of browned-butter dough, reinforced with gluten-free cinnamon toast crunch . It’s designed to mimic the 'spark' of a new engine—a sharp, sweet electricity that hits you before the velvet-soft interior takes over. The history of the Pink Cadillac in Detroit is a blend of automotive dominance, musical royalty, and local legend. While the car itself is a classic piece of Americana, its specific status in the Motor City is inseparable from Aretha Franklin. The primary reason the Pink Cadillac became a Detroit icon is Aretha Franklin’s 1985 hit single, "Freeway of Love." In the song, she famously sings about cruising in a "pink Cadillac" with the "top down, transition on." The music video was filmed entirely in Detroit, featuring prominent local landmarks and a fleet of pink Cadillacs. This cemented the car as a symbol of the city's soulful energy and its pride as the world’s automotive capital.  The connection became even more poignant in 2018 following Aretha Franklin’s passing. To honor her, more than 100 pink Cadillacs from across the country converged on Detroit. They lined the streets outside Greater Grace Temple for her funeral, creating a massive, shimmering tribute to the woman who gave the car its legendary local status.  Long before the song, Cadillac was already the gold standard of Detroit luxury. In the 1950s, Elvis Presley famously bought a pink Cadillac, sparking a nationwide obsession with the color. For Detroiters, seeing a pink Caddy wasn't just about a flashy car—it was a celebration of local craftsmanship and the "maximalist" style of the post-war era.
